George Hamilton's Quesadillas

1/4 cup ciantro, minced

1/4 cup yellow onion, minced

2 cloves garlic, minced

3/4 lb. medium-size shrimp

(Chicken can be substitued), chopped

3 tbsp. olive oil

2 1/2 cups reduced-fat shredded cheddar

or mozzarella cheese

4 flour tortiallas

 

In a mixing bowl, combine cilantro, onion, and garlic. Add

shrimp to bowl and coat them in mixture. In a skillet, heat 2

tablespoons oil until sizzling. Add shrimp and mixture; cook 3 minutes

or until shrimp are cook through. Remove shrimp from pan; add 1 tablespoon

oil. Spread cheese and shrimp over tortillas. Place one tortilla at a time in skillet, and cook over medium-high heat until cheese begins to melt. Fold tortilla

in half. Cook until lightly browned (about one minute). Repeat until all

tortillas are cooked. Let cool slightly and cut each tortilla in half. Sevres 4.
