Banana Bread
1 stick unsalted butter, softened
1/2 C sugar
1/4 C brown sugar, firmly packed
1 lge egg
11/4 C ripe bananas, mashed
1/4 C yogurt, plain
1 C whole wheat flour
1/2 C all purpose flour
1 t baking soda
1/2 t salt
Preheat oven to 350. Cream butter, add both sugars and
beat until light and fluffy. Add egg and beat well. In
small bowl combine well banana and yogurt. In another
bowl sift together both flours, baking soda and salt.
Stir banana mix alternately with flour mix into butter
mix and blend batter well. Pour into a buttered loaf
pan 9X5X13", and bake in middle of oven for 55 min.,
turn out onto rack and let cool completely. Serve at
room temperature. Will keep one week if wrapped
tightly and chilled. Makes 1 loaf.
