Corn Sticks
1 C white cornmeal
1 C all purpose flour
2 t double acting baking powder
1 t salt
1 C milk
2 lge eggs
1/2 stick unsalted butter, melted and cooled
shortening for greasing mold
Preheat oven to 400. Sift together cornmeal, flour, baing powder and salt. In another bowl, combine milk, eggs and butter, add to cornmeal, and stir until just combined (batter will not be smooth). Grease two 5 stick corn molds and heat in preheated 400 oven for 5 minutes. Spoon batter into molds, filling almost to the top, bake at 400 for 15 minutes, or until golden, and invert onto rack to cool. Makes 10.
