Sponge Cake


1/2 C+4t sugar
3/4 C+1T all purpose flour
3 lge eggs, at room temperature
pinch of salt

Preheat oven to 350. Line bottom o 8" square pan with wax paper and butter paper. Dust pan with 4t sugar, shaking out excess, and dust with 1T flour, shaking out excess. In bowl with elecric mixer beat eggs until combined, add 1/2 cup sugar a little at a time, beating, and beat for 5 to 7 minutes, or until thick and pale. Sift 3/4 cup flour with pinch of salt over mixtur and fold in. Pour batter into pan, smoothing top, and bake for 25 to 30 minutes, or until golden and pulls away from sides. Let cake cool in pan for 5 minutes, run thin knife around edge, and invert cake onto a rack. Remove wax paper and let cool.
