Parsnip Chips


1 pkg parsnips (16 oz) 1/4 c butter, melted 1/2 c flour 1/2 c vegetable oil
Peel parsnips, slice in 1/4" rounds, and cook in lightly salted water 2-3 minutes until tender crisp. Dip in melyed butter and chill until butter hardens (about 30 minutes). Roll parsnips in flour and fry in hot oil until golden crisp.
