a Christmas favorite!


Peppermint Truffles

Ingredients:

4 oz semisweet chocolate flavored coating
4 oz milk chocolate
1 tsp peppermint extract
1/3 c unsalted butter (at room temp)
1/2 c ground peppermint candy cane
1 lb. dark chocolate flavored coatings for dipping

Preparation:

Line a cookie sheet with waxed paper

Melt semisweet chocolate flavored coatings and milk chocolate in a double boiler

Add peppermint extract and stir well

With an electric mixer on HIGH, beat butter into the warm chocolate until light and fluffy

Using a melon scoop, make 1 in. balls and place on the prepared cookie sheet. Cover with plastic wrap and freeze until firm.

Using a dipping spoon, dip frozen balls in melted dark chocolate flavored coatings

Sprinkle with crushed peppermint

Store in refrigerator in a covered container up to 1 month or in a freezer for 3 months
