Fish of the Day

 

3 POINTS® per serving

 

INGREDIENTS

2 x 8 oz fish fillets

¼ cup fresh basil, finely chopped

1 tbsp lemon juice

1/3 cup light sour cream

INSTRUCTIONS 1. Coat a char-grill pan or health grill with

cooking spray. Add the fish and cook over medium heat for about 3 minutes on each side or until cooked. 2. Combine basil, lemon juice and sour cream in a small saucepan. Heat gently until warm, taking care not to boil. Serve over the fish.

TIP!

Fish cooks quickly so to gauge when it’s ready, insert a fork into the fillet. You’ll know it’s cooked when the flakes part easily and the flesh looks just opaque.
