Puffy Apple Pancake
Easy and impressive breakfast!

2 Tbs. butter or margarine (or cooking spray)
4 eggs
1 cup milk
1 cup all-purpose flour
2 Tbs. sugar
1/2 tsp. vanilla extract
1 apple - sliced or diced as desired
1 Tbs. confectioners' sugar, optional
Maple syrup, optional

Heat oven to 425. Melt 1 Tbs. butter in each of two 9" deep-dish pie plates in oven (or spray each with cooking spray). Beat eggs with milk, flour, sugar and vanilla. Pour half of the batter into each pie plate; scatter with apples. Bake 20 minutes, or until golden brown. Serve with confectioners' sugar or maple syrup. Makes 2-4 servings.

Options: Substitute any fruit for apples, such as strawberries or peaches; sprinkle batter with cinnamon sugar or brown sugar before baking; use cupcake baking dish for smaller individual servings.

Apple Cake
Easy and yummy all day snack!

2 cups sugar
1/2 cup oil
2 eggs
4 cups diced, unpeeled, cored apples
2 cups all-purpose flour
1 tsp. salt
2 tsp. cinnamon
1 tsp. nutmeg
2 tsp. baking soda

Combine sugar, oil and eggs; beat well. Stir in apples. Sift together flour, salt, cinnamon, nutmeg and baking soda. Add to apple mixture; stir well. Pour into greased and floured 13x9x2 baking dish. Bake one hour at 350. Serve warm or cold, plain or with whipped cream.

Mocha Pudding Cake
Delicious cake with bottom layer of pudding!

1 cup all-purpose flour
1 cup sugar, divided
1/4 cup plus 2 Tbs. unsweetened cocoa, divided
1 1/2 Tbs. instant coffee granules
2 tsp. baking powder
1/4 tsp. salt
1/2 cup milk
3 Tbs. vegetable oil
1 tsp. vanilla extract
Vegetable cooking spray
1 cup boiling water
Vanilla ice cream, optional

Combine flour, 2/3 cup sugar, 1/4 cup cocoa, coffee granules, baking powder, and salt in a bowl; stir well. Combine milk, oil, and vanilla in a bowl; add to dry ingredients, and stir well. Spoon batter into and 8" square baking pan coated with cooking spray. Combine remaining 1/3 cup sugar and remaining 2 Tbs. cocoa; sprinkle over batter. Pour 1 cup boiling water over batter. (Do Not Stir!) Bake at 350 for thirty minutes or until cake springs back when lightly touched in center. Serve warm, topped with ice cream.

Options: Omit coffee granules for chocolate cake; add nuts; sprinkle cake with confectioners' sugar and serve plain.
