Sweet Cherry Salsa
2 cups sweet cherries (pitted and chopped 1/4 cup bell pepper (chopped)
1/4 cup sweet onion (chopped) 1/3 cup Basel (chopped)
1/4 tsp salt Peel from 1 lemon
Juice from 1 lemon 2 tsp sugar
Mix all. Best served fresh.

Italian Meatballs - you have got to try these
1 lb. ground chuck 1/2 cup grated parmesan cheese
1/2 cup milk 1 tsp. garlic powder (heaping)
3 cups bread crumbs 2 eggs
1 tsp. oregano Salt and pepper to taste
Mix all together. Grease cookie sheet very lightly, roll into half dollar size ball and place on sheet and bake at 350° turning in 10 to 15 minutes. At this point if you have doubled or tripled the batch you can freeze for future use. To serve place in crock pot and cover with spaghetti or marinara sauce and warm for 1 hour on low.

Beer Batter Onion Rings
2 large onions ------------------------------------- 2 cups milk
2 cups cornmeal ---------------------------------- 1 cup flour
1 tsp. salt ----------------------------------------- 1 can beer (Miller Lite of course)
1 cup buttermilk
Peel and slice onions into medium slices. Separate and soak in milk. I large bowl mix cornmeal, flour and salt. Add beer and buttermilk mix till smooth. Remove rings from milk and dip into batter, coat well. Drop individual rings into deep fryer. When golden brown remove and drain on paper towel.

Taco Dip - Very easy but very good
4 packs cream cheese ----------------------------------- 16 oz sour cream
1 pack taco seasoning ----------------------------------- 2 cup shredded cheddar cheese
Chopped lettuce ------------------------------------------ Diced green onion
Diced tomatoes
Soften cream cheese, blend in sour cream till smooth. Add taco seasoning mix and mix well. Spread into a 9 by 13 pan, layer with lettuce, onions and tomatoes.
Serve with taco chips.

Meat Balls - May I be so bold as to say TREMENDOUS
2 pounds ground beef -------------------------------------1 pound Italian sausage
1/2 cup chopped pepperoni -------------------------------1 cup chopped onion & 1 cup chopped celery
1/2 cup chopped green peppers ---------------------------11/2 cups cheddar cheese crackers
1/4 cup Parisian cheese ------------------------------------2 eggs
In a large mixing bowl combine all till well mixed, make into desired size balls (best using hands) and place on baking rack with cookie sheet to catch grease. Bake at 350° for 1 1/2 hours.

Hot Wings - Not a meal to all - But by god they should be
1 pound chicken wings -------------------2 cups hot salsa
2 cups barbecue sauce------------------- 1 teaspoon Tabasco sauce
In a kitchen blender mix salsa, barbecue sauce and Tabasco sauce. Deep fry chicken wings for 5 mins, then bake at 325° for 20 mins. Dip in sauce mixture and keep warm till ready to eat.
For all you Nancy Boys out there - you can sub:
1 cup honey for salsa
2 tablespoons brown sugar for Tabasco

Taco Salad - with Pork the other white meat
1 pound ground pork --------------------------------- 1 - 8 oz can stewed tomatoes
1/4 cup chopped onion ------------------------------- 3 teaspoons chili powder
1/4 teaspoons garlic powder -------------------------- salt & pepper to taste
1/4 cup shredded cheddar cheese --------------------- 2 tomatoes cut into wedges
1 head lettuce ----------------------------------------- Corn chips
Brown and drain pork, stir in stewed tomatoes, onion, chili powder and garlic powder. Bring mixture to a rapid boil and reduce heat, simmering till mixture thickens. Season to taste with salt and pepper.
Now using a shallow casserole dish line bottom with lettuce leaves and tear rest of lettuce into bite size pieces, spoon pork mixture in and cover with cheese, tomato wedges and rest of lettuce.

Pizza Poppers - Finger food at its best
6 English muffins - split and toasted ------------------------ Your favorite pizza topping
1 cup pizza sauce ------------------------------------------ Mozzarella cheese
Dried oregano
Place muffin halves on microwave safe dish, spread pizza sauce in equal amounts. Top with your favorite toppings (I like a couple slice mushrooms some pepperoni and green peppers) sprinkle with cheese and oregano and microwave on high for 1 minute.

Polish Cabbage Rolls - If Heaven could be rolled in cabbage this would be it
1 pound ground pork ----------------------------------- 2 pound ground beef
2 eggs -------------------------------------------------- 1 medium onion - chopped
1 cup rice - uncooked -----------------------------------salt and pepper to taste
Garlic powder to taste (the more the better) --------------3 large head of cabbage
1- 12 oz can tomatoes ---------------------------------- -1 - 12 oz can tomato juice
Cook rice, add to 1st four ingredients and spices. Stir all together and let sit. Parboil cabbage, cutting out core beforehand. Drain, cool and remove leaves. Cut large vein off leaves, roll meat mixture in leaves. Arrange leftover cabbage in bottom of a large Dutch oven, then cabbage rolls. Cover with tomatoes then with more cabbage pieces. Pour tomato juice over top and cover with lid or foil and cook at 325° for 3 hours.

Pepsi Wings
5 pounds chicken wings ---------------------------- 12 oz bottle of catsup
1 1/2 cups Pepsi
Place wings in large baking dish, mix Pepsi and catsup and pour over wings. Cover and cook at 325° till wings are tender. Remove wings and cook sauce on top of stove over medium heat till thick, toss with wings and serve.

Sausage and Cheese Balls
2 cups Bisquick ---------------------------------------- 1 pound Italian sausage
1 cup cheddar cheese -----------------------------------Few drops of hot sauce
Mix all well, make into palm size balls. Can be frozen at this point for future use. Bake at 350° for 20 minutes.

Ham Balls - Don't laugh they're great, and a great way to use up left over ham
1 pound ground pork ------------------------------------- 1 pound fully cooked ham
2 eggs ---------------------------------------------------- 3/4 cup milk
1 cup cracker crumbs or oatmeal
Sauce
1 1/2 cups packed brown sugar -------------------------- 2/3 cup pineapple juice
3/4 tbls. horseradish mustard
In a large mixing bowl combine pork, ham, eggs, milk and cracker crumbs and mix well (get your hands in it). Shape into palm size balls place on greased cookie sheet. In a small sauce pan combine all sauce ingredients and heat tru, pour over balls and bake for 1 hour at 350°.
