Fire Cracker Pork - Unbelievable
3 to 4 pound pork roast 2 tsp pepper
2 tsp paprika 1 tsp sage
1/2 tsp red pepper 2 tsp garlic powder
2 tsp onion powder 2 tsp salt
2 tsp dry mustard
Mix all spices, rub on roast and cover tightly with plastic wrap. Refrigerate at least over night, best if for a day or so.
The only way I would cook it is on a out door grill - It gets a nice burnt crust that way.

Chop Suey - A very simple recipe and great for a quick meal
1 can brown Chinese gravy 1 can chop suey vegetables
1 cup lean pork - cut into strips 1 1/2 cups lean beef cut into strips
1/2 cup onion - large strips 1/2 cup celery - large pieces
1/4 cup soy sauce 1 teaspoon corn starch
Brown meat and steam in broth from vegetables on low heat for 1/2 hour covered. Add vegetables and gravy, heat through. Mix soy sauce and corn starch, pour evenly across and heat through. Serve over rice.

Meat Loaf - Don't laugh it's one of my favorites
1 pound ground beef 1/2 pound mild pork sausage
2 eggs 1/2 cup chopped onion
1/2 cup chopped celery 1/4 cup chopped green pepper
1 1/2 cup cracker crumbs 1/2 cup milk
I a large mixing bowl combine all with 1 cup cracker crumbs ( salt and pepper to taste). Place in a medium loaf pan and cover with remaining cracker crumbs. Bake at 475 for 1 1/2 hours.

Swiss Steak
Lean roast - aprox 4 pounds 1 can tomato sauce
2 beef bouillon cubes 1 cup chopped onion
1 cup chopped celery 1 bay leave
Cut roast into equal size pieces and brown. In medium size baking dish add bouillon cubes,1 cup water, onion and celery heat till cubes dissolve. Add meat and tomato sauce, simmer for 1 hour covered and uncovered for 1 hour.

Salisbury Steak - Well it's not steak - but what's in a name
5 or 6 1/4 pound hamburger patties 1 cans cream of mushroom soup
1 can cream of celery 1 cup chopped onion
1/2 cup chopped celery Salt and pepper to taste
1 cup water or for richer gravy 1 cup milk
Lightly brown hamburger and drain grease. In deep pan or baking dish combine soup, onion, celery and water/milk and heat till soup dissolved. Add hamburger patties and simmer covered for 45 mins, then uncovered for 30 mins.

Coca - Cola Pork Chops - most Tasty
8 to 10 medium cut pork chops 1 cup Coca - Cola
1 cup ketchup
Brown pork chops, mix coke and ketchup and pour over. Simmer for 1 hour, remove chops and turn up heat to thicken sauce.

Sloppy Joe's
2 pounds ground beef 1/2 cup chopped green pepper
1 cup chopped onion 1/4 cup chopped celery
2 cups tomato sauce 1 tablespoon chili powder
1 tablespoon Worcestershire sauce
Brown hamburger and drain grease. Combine all and simmer to desired consistency.

Maple Pork Chops - for someone with a sweet tooth
6 to 8 thick cut pork chops 1/2 cup maple syrup
Salt and pepper to taste 1/4 cup brown sugar
Brown pork chops well an both sides. Turn heat to simmer and add salt, pepper, maple syrup and brown sugar. Cover and simmer for 1 to 1 1/2 hour till pork chops are tender. Turning to coat.

Pepper Steak - This one was one of my favorite at home
1 sirloin steak - cut into strips ------------------------------ 1 medium onion sliced
3 sticks celery chopped ------------------------------------ 1 green pepper sliced
1 sweet red pepper sliced ---------------------------------- 1 cup mushrooms sliced
1 tbls cornstarch ------------------------------------------- 1/8 tsp ginger
1/2 cup soy sauce ------------------------------------------1 clove garlic
3 tbls light oil -----------------------------------------------2 beef bouillon cubes
In a shallow bowl add soy sauce and ginger, marinate meat in this for 1 hour. Brown meat with onion, celery, green pepper, red pepper and mushrooms in oil. Then add 1/2 cup water, salt and pepper to taste and simmer for 30 minutes. Take beef bouillon cubes and dissolve in 1/2 cup hot water, 1/4 cup soy sauce mixture and cornstarch, mixing till well blended. add to meat and simmer 10 mins to thicken. Serve over rice.

Steak and Mushrooms - Really quick and simple
2 pounds round steak --------------------------------------- 1 can or jar mushrooms ( the more the better )
1 medium onion sliced ---------------------------------------1 tbls light oil
1 tbls corn starch -------------------------------------------- Water
1 beef bouillon cube ----------------------------------------- 1/2 tsp garlic powder
Cut steak in strips. Brown steak and onions in oil. Add mushrooms, and simmer for 15 to 20 minutes, season with salt and pepper to taste. Dissolve bouillon cube in 1/2 cup water, corn starch and garlic powder, mix till well blended. Add bouillon mixture to pan and heat till thickened. Serve over rice or with mashed potatoes.

Beef Porcupines
1 box rice vermicelli --------------------------------------- 1 pound ground beef
1 egg (beaten) ------------------------------------------- 2 1/2 cups water
Combine rice, beef and eggs, shape into small meatballs. Brown on all sides. Mix contents of flavor packet and water and pour over meatballs. Cover and simmer for 30 minutes. Cornstarch can be added to thicken gravy.

Hawaiian Pork Roast - Unbelievable
4 to 5 pound pork roast --------------------------------- 4 tsp liquid smoke
4 tsp soy sauce ------------------------------------------ 2 ripe bananas
1/2 cup water
Place roast on large piece of heavy foil, sprinkle with liquid smoke and soy sauce. Place bananas at sides of roast and pull sides of foil around, add water and wrap foil tightly around meat, place another piece of foil around roast and refrigerate over night on a plate or baking dish turning several times.
Place foil warped roast in a roasting pan and bake at 400 for 1 hour, reduce heat to 325 and continue to bake for 3 hours. Drain , discard bananas. Shred meat into large chunks and serve.
