A little taste of Italy
Although I'm German by birth - I love pasta
Rigatoni
1 lb. ground beef 1 1/2 cups sliced mushrooms
1 28 oz. can crushed tomatoes with garlic 2 cups dry rigatoni pasta
1/2 tsp. dried rosemary - crushed 1/2 cup shredded mozzarella cheese
In a LARGE saucepan brown beef and mushrooms, drain grease. Stir in tomatoes, 1 cup water, uncooked pasta and rosemary. Bring to a boil; reduce heat and simmer covered for 20 minutes. Transfer to a serving bowl, sprinkle with cheese and EAT.

Stuffed Shells
1 box jumbo shells -------------------------------------- 1 can spaghetti sauce (20 oz)
1/2 cup chopped green pepper --------------------------1 cup chopped onion
12 oz mozzarella cheese ---------------------------------1 pound ground beef
1/2 pound Italian sausage --------------------------------1 tablespoon olive oil
Brown meat with 1/2 of the onion place in sauce pan with spaghetti sauce, peppers and remainder of onion, simmer on low covered for 1 hour. In large pan add 2 quarts water pinch of salt and oil, bring to a rapid boil, cook shells till slightly flexible, remove shells and place in cool water. Using a tablespoon fill each shell with meat mixture and place in a deep baking dish, fill in around shells with remaining meat mixture and cover with cheese. Bake at 325 covered for 15 minutes and 5 minutes uncovered.

Lasagna - Another long one but quite tasty
Step one
1/2 pound Italian sausage ------------------------------------ 1/2 pound ground beef
1 medium onion chopped ------------------------------------ 4 tablespoons olive oil
Brown meat and drain well on a paper towel. Place oil in pan and sauté onion till transparent, add meat and set aside.
Step two
16 oz small curd cottage cheese -------------------------------------1 tablespoon Italian seasoning
1 teaspoon oregano -------------------------------------------------2 teaspoon garlic powder
1 egg ----------------------------------------------------------------1/4 cup grated parmesan cheese
Mix all well and set aside.
Step three
2 - 15 oz cans of your favorite sauce ---------------------------------3 cups shredded mozzarella cheese
1 one pound box of lasagna noodles ----------------------------------6 quarts water
In a large pot bring water to rapid boil add noodles and cook for 10 to 14 minutes, drain and rinse in cold water. In a oblong dish(sprayed with cooking spray) spoon 1/2 cup sauce to cover bottom then layer noodles, cheese mixture, meat, sauce and mozzarella cheese. Repeat till pan is just short of full, last cover top with layer of sauce and mozzarella cheese. Bake 40 minutes at 300, cool before cutting.
