MethodPlace rice in a bowl, add enough water to cover the rice by 1 - 2 inches, rub the grains between the fingertips. The liquid will go milky , leave to stand for 30 minutes. Rince and drain the rice under a cold water tap until the water runs clear. Drain thoroughly. Place the rice in a saucepan, add 10 fl oz of water and a pinch of salt. Bring to the boil and then reduce the heat to a low simmer. Cover with a lid and cook for 5 -6 minutes. Lift lid to inspect the rice. By this time the rice should have absorbed the liquid, if so remove from the heat, If not, replace and cook for a further minute. Cover the saucepan with a cloth, then replace the lid and leave to stand in a warm place for 15 minutes. remove the lid, and using a fork lightly fluff the rice and serve.
