Heat the oil until it smokes but does not burn. Add the dry chilli powder and cardamom pods. Cook until chilli goes black, but not burned. Add the onion, chilli, garlic and ginger. Cook until onions brown. Add meat and tomatoes. Add water, turmeric, garla masala, coriander powder and salt. taste and add extra if needed. Add tomato puree. Simmer, taste. If bitter add a little sugar. When meat is cooked, add fresh coriander. Cook until meat is tender and coriander turns black. This page hosted by Get your own Free Home Page
