Broccoli Corn Bread

Ingredients

1 Package Broccoli Flowerets -- frozen (10 oz)
1 Large Onion -- chopped
1/2 Cup Margarine
4 Egg -- lightly beaten
1 Cup Cottage Cheese
1 Package Corn Muffin Mix, Such As Jiffy

Directions

Lightly cook broccoli according to package directions. Drain. Using 2 knives, cut broccoli into small pieces.

Sauté onion in margarine until tender, but not brown.

Combine broccoli, sautéed onions, eggs, cottage cheese and muffin mix. Stir to mix well. Pour into greased 13x9 inch pan. Bake at 375 degrees for 45-50 minutes or until browned. Serve immediately.
