Parmesan Breadsticks
Ingredients
3/4 Teaspoon Salt
1 Package Quick-Rise Yeast
2 Cups Flour, All-Purpose
2 Tablespoons Olive Oil
1/4 Cup Parmesan Cheese -- grated
Directions
ABOUT 4 HOURS BEFORE SERVING OR UP TO 3 DAYS AHEAD:
1. In large bowl, combine salt, yeast, and 3/4 cup flour.
2. In 1-quart saucepan over medium heat, heat olive oil and 2/3 cup water until very warm (125 to 130 degrees).
3. With mixer at low speed, gradually beat liquid into dry ingredients just until blended. Increase speed to medium; beat 2 minutes. With wooden spoon, stir in Parmesan cheese and 3/4 cup flour.
4. Turn dough onto lightly floured surface and knead until smooth and elastic, about 10 minutes, working in more flour (about 1/3 cup) while kneading. Shape dough into a ball and place in a greased medium bowl, turning dough to grease top. Cover; let rise in warm place (80 to 85 degrees) until doubled, about 30 minutes.
5. Preheat oven to 375 degrees. Grease 2 large cookie sheets. On floured surface, roll dough to about 15" by 10" rectangle. With pizza wheel or knife cut dough crosswise into about 1/2-inch-wide strips.
6. Fold each strip in half. With hands, on work surface, roll each doubled strip to a 12-inch length. Place strips, about 1/2 inch apart, on cookie sheets.
7. Place cookie sheets on 2 oven racks; bake breadsticks 20 minutes or until golden, rotating cookie sheets between upper and lower racks halfway through baking time. Cool breadsticks on wire racks.
