Zucchini Bread

Ingredients

1 1/2 Cups Sugar
3/4 Cup Brown Sugar
3 Cups Flour
1 1/4 Teaspoons Baking Soda
1 Teaspoon Soda
1 Teaspoon Cinnamon
1 Teaspoon Salt
3 Whole Eggs -- well beaten
1 Cup Oil
1 1/4 Teaspoons Vanilla
2 Cups Zucchini -- grated

Directions

With electric mixer, combine first seven ingredients. Then add eggs, oil, vanilla, and zucchini. Mix well. Divide mixture into 2 greased loaf pans and bake at 325 degrees for approx. 1 hour or until toothpick inserted at center comes out clean. Cool on rack. Can be frozen if required.
