Zucchini Rounds

Ingredients

1/3 Cup Bisquick
1/4 Cup Parmesan cheese
2 Tablespoons Onion -- minced
2 Tablespoons Margarine
2 Eggs -- slightly beaten
2 Cups Zucchini -- unpeeled and
1/8 Teaspoon Pepper

Directions

In a mixing bowl, add Bisquick, cheese, pepper, and onion. Stir in beaten eggs just until mixture is moistened. Fold in zucchini. In a large skillet, melt margarine over medium heat or use oil to fry the rounds. Use about 2 tablespoons of mixture for each round.
