4 cups old-fashioned oats
1 cup flaked coconut
1 cup coarsely chopped pecans
½ cup unsalted sunflower nuts
½ cup wheat germ
½ cup firmly packed brown sugar
1 teaspoon ground cinnamon
1 teaspoon salt
½ cup vegetable oil
½ cup water
2 Tablespoons honey
1 teaspoon vanilla
1 cup raisins
1 cup coarsely chopped dates
Preheat oven to 300º. Lightly grease 15½x10½x1 inch jelly roll pan.
Combine oats, coconut, pecans, sunflower nuts, wheat germ, sugar, cinnamon
and salt in large bowl. Stir together oil, water, honey, and vanilla in small
bowl. Pour over oat mixture; mix well. Spread mixture evenly in prepared
jelly roll pan. Bake in preheated oven for 1 hour,stirring every 15 minutes, until
golden brown and slightly crunchy. Cool in pan on wire rack. Stir in raisins and
dates. Store in airtight container. Makes 9 cups
