2 medium size ripe bananas, mashed
½ cup grated carrots (use 1 or 2 medium carrots)
½ cup chunky peanut butter
¼ cup packed brown sugar
½ cup honey
3 Tablespoons vegetable oil
2 eggs
1 ¾ cups whole wheat flour
¼ cup milk
2 teaspoons vanilla extract
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon ground cinnamon
½ teaspoon ground nutmeg
¼ teaspoon ground cloves
1/8 teaspoon salt
Heat oven to 325 º . Grease and flour a 9x5x3 inch loaf pan. Mix bananas, carrots,
peanut butter, honey, brown sugar, oil, and eggs together for 1 minute. Add whole
wheat flour, milk, vanilla, baking soda, baking powder, cinnamon, nutmeg, cloves and
salt. Beat an additional minute. Pour batter into loaf pan. Bake for 45 to 65 minutes or
until done. Cool bread for 10 minutes before removing from pan. Wait until cooled to room
temperature before slicing. Slice and spread with layer of Cream Cheese and layer of Jelly
Makes 1 loaf or about 10 sandwiches
