1 ½ cups tortilla or corn chips
1 pound lean ground beef
½ cup medium taco sauce
½ cup shredded Cheddar cheese
1 egg
12 slices bread

Heat oven to 350 º. Crush chips to crumbs. Mix crumbs, ground beef,
½ cup taco sauce, ¼ cup cheese and egg. Place mixture in the middle of an
8x8x2 inch baking pan. Pat into meat loaf shape. Bake 30 minutes. Sprinkle
remaining cheese over top. Bake 15 minutes longer or until cheese is melted and
lightly brown. Cool. When cooled slice for sandwiches. To make one sandwich,
spread one slice bread with a thin layer of taco sauce. Add a slice of meat loaf.
Top with a leaf of lettuce, then cover with a second slice of bread that has been spread
with a thin layer of taco sauce. Makes 6 sandwiches Taco loaf can be wrapped
and frozen after it is baked and cooled for up to 4 months.
