Kidney Beans and Bacon

Margaret says that this side dish is great with any kind of ribs......somebody pass me a BIG napkin!

1 - 14 ounce - can of kidney beans
1 small onion, diced
2 cloves garlic, minced
125 grams (that's about 1/2 a pound for all you metric holdouts) bacon, diced
1/4 cup ketchup
1/4 teaspoon thyme
pepper to taste

Drain the kidney beans (I rinse them too to reduce the sodium) and set aside.

Saute the onion and garlic along with the bacon in a large skillet. When bacon is cooked, and onion is browned, drain off the bacon fat.

Add the ketchup and seasonings to the skillet, stir in the kidney beans. Simmer for a minimum of 15 minutes, adding more ketchup if needed.

(honey....did ya bring home the bacon like I asked?????)

*sigh*...back to school .....just when we were having fun......
