Jim says it's a very nutritious lowfat dish. It could be made even lower in fat by skipping the oil used to saute the onions and replacing it with a little chicken stock and 'sweating' them.
Serves 8 - 10
1 Tbsp (or so) vegetable oil
1 cup chopped onions
4 cloves garlic, minced
2 cups chopped parsley
1 cup chopped green onions (dark green parts only - or use chives if in season)
1/2 cup dried whole dill
1/2 cup dried red kidney beans (if beans aren't really fresh, soak first)
1/2 cup dried whole lentils (preferably the brown or green kind)
1/2 cup yellow split peas
1/3 cup raw white rice
2 bouillon cubes, any kind
Heat oil in large soup kettle, saute onions until beginning to brown nicely. Add garlic and saute until very aromatic.
Add all the remaining ingredients, plus enough water to cover, and simmer for 2 - 3 hours, adding more water as needed, until beans are tender.
Taste and correct the seasoning, adding salt and pepper to taste.
Sounds pretty easy, doesn't it!! Haven't had time to try it myself yet, but I'm going to as soon as finals are over! Mmmmmmm......
