Lemon Sorbetto
A refreshing treat on a warm Indian Summer day. Makes a beautiful light dessert, garnished with mint sprigs and fresh berries!
Makes about 1 quart
2 egg whites
3 3/4 cups lemonade
sugar to taste, if desired
Beat egg whites until foamy, but not dry. Blend in lemonade and sweeten to taste, if needed.
Pour into ice cream maker and process according to manufacturers directions.
OR...
Pour mixture into a shallow metal baking pan and pop into the freezer for a few hours. Remove from pan to bowl and beat or mash until all large ice chunks have been broken up and mixture is fluffy. Return to freezer, freeze until firm.
Allow mixture to soften slightly before serving.
Serve with crispy sugar cookies.
