Margaret's Cajun Pork Tenderloin

1 1/2 pounds pork tenderloin
2 teaspoons chili powder
pinch of cayenne pepper
salt and pepper to taste
3 medium onions, sliced thinly
one small bunch fresh parsley, chopped
3 large cloves of garlic, minced
1 - 28 ounce - can tomatoes
1 Tablespoon brown sugar
1 Tablespoon dijon mustard
1/4 teaspoon thyme
worcestershire sauce to taste

(kinda gets right to the point, doesn't she! No intro, no life story - just the facts, ma'am!)

Trim fat from pork. Brown in olive oil in a large fry pan. When brown, add onions and parsley and cook until onions are transparent.

Combine all the rest of the ingredients in a large casserole dish. Add pork and onions.

Bake, covered, at 350F for about 30 min.

Serve with rice.

(Actually, Margaret did say that one of the reasons she likes this dish is because there's very little added fat. Looks good, doesn't it!)
