Poached (or Steeped) Chicken

Apparently, this isn't actually "poached" chicken, but "steeped". Whatever you call it, it is the best - tender and not dry! And really easy.

Cover boneless skinless chicken breast halves with water. Bring just to a boil over high heat.

Remove from heat; cover tightly, let sit 18 min. Check for pinkness; if needed, let sit a few minutes longer.

Once cooked, immerse in iced water to stop the cooking process. Chill if desired.

If you really think it's necessary, a few peppercorns or bay leaves can be added to the water. I've even used weak chicken broth with yummy results.
