Aunt Dorothy's Baked Round Steak & Shrooms

When I was little, this was the ONLY way my mom could get me to eat beef that hadn't been ground up and heavily disguised in a sauce or chili!

2 pounds round steak -- top or bottom
flour
6 Tablespoons vegetable oil
water
salt and pepper
2 cups canned mushrooms -- whole

Dredge steak lightly in flour, shaking off excess. Brown steak in hot oil in heavy skillet; drain and remove to baking pan or dish.

Measure oil remaining in skillet. For each 2 Tbsp oil, set aside 2 Tbsp flour and 1 cup water.

Return oil to skillet, blend in flour, stirring constantly until a rich brown.

Stir in water and salt and pepper to taste. Cook gravy to medium thickness.

Pour gravy over steak, cover and bake 1 1/2 hours at 350F, or until meat is tender.

Top with mushrooms during last 5 to 10 min of baking time.
