4 eggs, separated
3/4 cup sugar
1 pound mascarpone (or cream cheese)
6 - 12 cups espresso (seems a bit much to me, maybe 'shots' instead of cups???)
1/4 cup rum or anisette
2 packages lady fingers
chocolate shavings for garnish
Beat egg yolks with sugar and cheese until creamy. Beat egg white; fold into cheese mixture.
Soak cookies in coffee and rum.
Line a glass dish with 1 layer of cookies. Cover with 1/2 the cheese mixture. Repeat once more.
Garnish with chocolate shavings.
Chill 4 hours before serving.
