Insalata di Pere e Parmagiana
Pears, Parmesan, Basil and Mint with Bitter Greens

serves 4

Ingredients:
about 4 cups mixed bitter greens; frisee, radicchio, baby lettuces, etc.
3 tbs olive oil, or as desired
1 tbs red wine vinegar, or as desired
salt and coarsely ground black pepper
1/4 cup each thinly sliced fresh basil and mint leaves
1 ripe pear, thinly sliced
about 2 oz pungent cheese such as romano or pecorino, cut into shavings

Preparation:
Toss greens with olive oil and vinegar, and salt and pepper to taste. arrange on a serving platter and strew the top with mint , basil, pear and cheese shavings. serve at once.

Variations:
if it's too early for fresh basil, i use lovage from the garden. it could be omitted. i used garden mint to play against the orange mint in the Pollo al Limono.
