Apple
Cake
10 oz. flour, 1/4 lb butter,
1/4 lb sugar, 2 whole eggs, 1-2 Tbs rum, 2 lbs apples, 1 oz. butter, 4
Tbs raisins soaked in the rum, 2 Tbs candied orange peel, chopped, 1 egg
yolk.2 Tbs almonds 3 1/2 oz. confectioner's sugar, 1 Tbs Arrack and 1 Tbs
hot water.
Sift the flour onto a pastry
board. Add the butter, in flakes, sprinkle with the sugar and add the eggs
and rum. Mix and knead quickly to a dough, and let rest for 1/2 hour, covered.
Peel and thinly slice the apples (use a tart, mealy sort), soute them briefly
in the butter ,3-4 mins and let them cool. Roll out smaller half of dough
into a circle large enough to cover bottom and sides of a 10-in. buttered
spring form. Mix apple slices, raisins and orange peel and fill into the
lined form. Roll out remaining dough to cover top of cake; press edges
to seal. Punch holes into top layer to allow steam to escape.
Brush top with egg yolk and
garnish with almond halves, pressing down firmly to hold. Bake in preheated
420 degree F oven 40 - 50 minutes. Mix the sifted sugar with the liquids
and pour over the hot cake. Let cool before removing spring form. Serve
with a bowl of whipped cream.
