RIOJA-STYLE POTATOES STEW
(Patatas a la Riojana)
Ingredients (4 persons)

1/2 onion (finely chopped)

Potatoes 1 Kilo (peeled and cut into thick slices)

2 cloves of garlic (crushed)

1 handful of parsley (crushed)

1 coffee spoon of cummin (crushed)

200 grams of Chorizo sausage (paprika-red Spanish sausage, cut into thick
slices)
Algorythm

Put abundant olive oil into a pot, and set it to a low heat.

Add the chopped onion and after some minutes add the cut potatoes, and
allow it to fry over a low heat for 5 minutes.

Crush together in a mortar the garlic, parsley and cummin. Add this mixture
together with the chorizo to the pot, and fry over a low heat for another
5 minutes.

Cover it with cold water, and allow it to boil until the potatoes are tender.

Serve hot.
