RIOJA-STYLE POTATOES STEW

(Patatas a la Riojana)


Ingredients (4 persons)


Algorythm

  1. Put abundant olive oil into a pot, and set it to a low heat.
  2. Add the chopped onion and after some minutes add the cut potatoes, and allow it to fry over a low heat for 5 minutes.
  3. Crush together in a mortar the garlic, parsley and cummin. Add this mixture together with the chorizo to the pot, and fry over a low heat for another 5 minutes.
  4. Cover it with cold water, and allow it to boil until the potatoes are tender.
  5. Serve hot.
