The first item that I have ready for this section is an article on making Sparkling Wine using dialysis tubing to contain the yeast and eliminate disgourging. I have used this method for several years with good success. More to come under this heading in the near future including my opinions on pH and acidity measurement and correction in wines. As always, any suggestions for these pages will be welcome.
