Lumpia is probably one of the most popular Philippine dishes. As with most recipes you can modify the stuffing ingredients to better suit your own personal taste. My wife usually uses ground beef, however, ground pork, chicken, turkey, shrimp etc. may be substituted. I think you will most certainly enjoy these.
Mix together in a medium bowl: ground beef, onion, carrot, celery, pepper, salt garlic powder and egg yoke. Carefully seperate the lumpia wraps (this will probably be the most time consuming part but with a little patiences and practice you'll become a master). Start by placing one wrap one a flat surface. Place one or two teaspoons of meat mixture in the center of wrap in a straight line not quite all the way to the edges. fold one half over the other and and fold the sides in to keep the meat from coming out. Wrap into cylinder shape fairly tight without breaking the wrap. seal the edge with a little bit of the reserved egg white. continue until you run out of meat. . Deep-fry in hot oil until golden brown and drain on paper towel. Serve with Banana Katsup or your favorite sweet and sour sauce.
