Peach Cobbler
Ingredients:
2 cups fresh peaches
1/2 cup sugar
1 egg, beaten
2 eggs, separated
1 Tbs. fine sugar
1 Tbs. cornstarch
1/2 tsp. almond extract
Instructions:
- Peel and slice peaches, add 1/2 cup sugar and beaten egg; stir.
- Pour fruit mixture into a well greased baking pan.
- With a hand beater, beat the egg yolks until they are a very pale yellow.
- Add the sugar, almond extract & cornstarch and continue beating until mixture is fluffy
- In a separate bowl, beat egg whites until stiff; fold into egg/sugar mixture
- Pour the batter over the fruit and bake for 30 minutes.
This is excellent served while still warm with vanilla icecrea, or creme anglaise.
Pear Cranberry Crisp
Ingredients:
Topping
1 1/2 cups pecans, chopped
3/4 cup flour
1/2 cup granulated sugar
1/4 cup brown sugar, packed
1 1/2 teaspoons cinnamon
1/2 cup unsalted butter, cold
Filling
1 3/4 cups cranberries, fresh or frozen
1/2 cup granulated sugar
1 teaspoon ground cinnamon
1/4 cup cranberry juice
2 1/2 Tablespoons flour
6 ripe fresh pears, peeled, cut into 1/2" cubes
Instructions:
- Preheat oven to 350 degrees.
- In a mixing bowl combine pecans, flour, sugars and cinnamon. Using a pastry blender, cut in butter until mixture is crumbly. * This is where we add the 1/2 cup oats. Set aside.
In a saucepan combine cranberries, sugar, cinnamon, cranberry juice and flour. Cook over medium heat, stirring often, about 10 minutes or until mixture is thickened and cranberries have burst. Stir in pears
- Pour the filling into an ungreased 8X12 baking dish. Sprinkle evenly with topping mixture. Bake in oven for about 30 minutes or until golden brown and bubbling.
- Serve warm.
Apple Crisp
Ingredients:
4 cups apples, sliced
2/3 cup brown sugar
1/2 cup flour
1/2 cup oatmeal
3/4 teaspoon cinnamon
3/4 teaspoon nutmeg
1/3 cup butter, softened
Instructions:
- Heat oven 375 F. Place apples in greased square baking dish. Blend remaining ingredients until crumbly. Spread over apples.
- Bake 30-35 minutes.
- Serve warm with ice cream.
Rhubarb Apple Crisp
Ingredients:

TOPPING
1/3 cup lightly packed brown sugar
1/3 cup oats
3 tablespoons flour
2 tablespoons margarine, melted
FILLING
2/3 cup granulated white sugar
3 tablespoons all purpose flour
2 cups slices apples
3 cups rhubarb, diced
Instructions:
- Combine all topping ingredients in a bowl, and mix well.
- In a separate bowl, combine sugar and flour
- Add fruit to flour mixture, and toss to coat.
- Spoon fruit mixture into a 2 litre baking dish, sprinkle with topping mixture
- Bake at 375 for 40-50 minutes until fruit is tender.
