Garden Stuffed Mushrooms

Ingredients:

16 mushrooms, stems removed 1/2 cup stuffing mix, crushed 1/4 cup butter, melted 1/4 cup carrot finely chopped
1/4 cup green pepper, finely chopped
pepper to taste
2 tbs. onion, finely chopped

General Info: Heat oven to 350F

Instructions:
  1. In small bowl, stir all the ingredients together except mushrooms.
  2. Stuff each mushroom cap with 1 tablespoon filling.
  3. Place in buttered baking dish and cook for 25 minutes.

Grandma's Marinated Mushrooms

Ingredients

3/4 cup cider vinegar
1/3 cup oil
1 tsp. salt
1/2 tsp. sugar
1 small clove garlic, minced
1/4 tsp. pepper
1/4 tsp. oregano
1/4 tsp. thyme
1 1/2 lbs. small button mushrooms, washed

Instructions:
  1. Combine all ingredients together except mushrooms.
  2. Pour over mushrooms, and chill for at least 24 hours.

Mushrooms in Cream Sauce

Ingredients

1 lb. mushrooms, quartered
2/3 cup heavy cream
2 tbs butter, melted
4 cloves garlic, chopped
1 tsp pepper
2 tsp nutmeg
1/2 cup chopped cilantro
salt and pepper to taste

Instructions:
  1. In a large saucepan, sauté the garlic and mushrooms over high heat for about 4 minutes.
  2. In a saucepan heat the cream over low heat.
  3. Add cream, salt, pepper, and nutmeg to the mushrooms
  4. Cook for about 5 minutes, add 1/2 cup chopped cilantro, stir and cook another minute.

Serving Suggestions & Notes:
Serve on hot buttered rice, toast points or broad egg noodles.

Stuffed Mushrooms with Blue Cheese

Ingredients

Ingredients: 16 large mushrooms
4 oz blue cheese
1 clove garlic, minced
10 oz. frozen chopped spinach, thawed
2 Tbs. butter
salt and pepper to taste

General Info:
preheat oven to 350 °

Instructions
  1. Remove the mushroom stems and chop finely.
  2. Mix well the chopped stems, blue cheese, garlic, spinach, and salt and pepper.
  3. Melt the butter and coat the entire mushroom, inside and out.
  4. Stuff the mushrooms with as much stuffing as can fit
  5. Bake at for 10 to 15 minutes until bubbly and browned
