Pumpkin Cheesecake Bars
Ingredients

1 16-oz. pkg. pound cake mix
3 eggs
2 Tbs. butter, melted
4 tsp. pumpkin pie spice
1 8oz. pkg. cream cheese
1 14oz. can sweetened condensed milk
1 16oz. can pumpkin
1/2 tsp. salt
1 cup chopped nuts

General Info: Preheat oven to 250 degrees

Instructions:
  1. In large mixer bowl on low speed, mix cake mix, 1 egg, butter and 2 tsp. pumpkin pie spice until crumbly. Press onto bottom of 15 x 10 inch baking pan.
  2. In large mixing bowl, beat cheese until fluffy. Gradually beat in sweetened condensed milk, remaining 2 eggs, pumpkin, 2 tsp. pumpkin pie spice and salt; mix well.
  3. Pour over crust; sprinkle with nuts. Bake 30 to 35 minutes or until set. Cool.
  4. Refrigerate; cut into bars. Store covered in refrigerator.

Pumpkin Muffins
Ingredients

4 eggs, beaten
2 cups sugar
1 1/2 cups oil
1 14 oz. can pumpkin
3 cups flour
2 1/2 tsp. cinnamon
1 tsp. nutmeg
2 tsp. baking soda
2 tsp. baking powder
1 tsp. salt
2 cups raisins

General Info: Preheat oven to 400 degrees

Instructions:
  1. Beat together eggs, sugar, oil & pumpkin
  2. Mix together all dry ingredients and stir into pumpkin mixture; stir until smooth
  3. Stir in raisins
  4. Grease a muffin tin and fill each hole 2/3 full.
  5. Bake for 15 minutes.

Pumpkin Nut Bread #2
Ingredients

1 cup pumpkin, pureed 1/2 cup vegetable oil
1/4 cup water
1 1/2 cups flour
1 cup sugar
1/2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. all spice
1/2 tsp. cinnamon
1/4. tsp. nutmeg
2 eggs
1/2 cup chopped walnuts or pecans

General Info
Grease a 9x5x3 inch loaf pan with shortening.
Preheat oven on to 350°.

Instructions:
  1. In a medium bowl use a wooden spoon to stir together flour, baking powder, salt, spices, and baking soda.
  2. In separate bowl beat together the pumpkin, oil, water, and spices.
  3. Stir flour mixture into pumpkin mixture to blend; do not over mix. Add nuts, and stir in quickly.
  4. Pour into greased loaf pan and cook for 1 hour.
