Pleasing Pumpkin
Pumpkin Cheesecake Bars
Ingredients
1 16-oz. pkg. pound cake mix
3 eggs
2 Tbs. butter, melted
4 tsp. pumpkin pie spice
1 8oz. pkg. cream cheese
1 14oz. can sweetened condensed milk
1 16oz. can pumpkin
1/2 tsp. salt
1 cup chopped nuts
General Info:
Preheat oven to 250 degrees
Instructions:
- In large mixer bowl on low speed, mix cake mix, 1 egg, butter
and 2 tsp. pumpkin pie spice until crumbly. Press onto bottom
of 15 x 10 inch baking pan.
- In large mixing bowl, beat cheese until fluffy. Gradually beat
in sweetened condensed milk, remaining 2 eggs, pumpkin, 2 tsp. pumpkin pie
spice and salt; mix well.
- Pour over crust; sprinkle with nuts. Bake 30 to 35 minutes or
until set. Cool.
- Refrigerate; cut into bars. Store covered in refrigerator.

Pumpkin Muffins
Ingredients
4 eggs, beaten
2 cups sugar
1 1/2 cups oil
1 14 oz. can pumpkin
3 cups flour
2 1/2 tsp. cinnamon
1 tsp. nutmeg
2 tsp. baking soda
2 tsp. baking powder
1 tsp. salt
2 cups raisins
General Info:
Preheat oven to 400 degrees
Instructions:
- Beat together eggs, sugar, oil & pumpkin
- Mix together all dry ingredients and stir into pumpkin mixture; stir until smooth
- Stir in raisins
- Grease a muffin tin and fill each hole 2/3 full.
- Bake for 15 minutes.

Pumpkin Nut Bread #2
Ingredients
1 cup pumpkin, pureed
1/2 cup vegetable oil
1/4 cup water
1 1/2 cups flour
1 cup sugar
1/2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. all spice
1/2 tsp. cinnamon
1/4. tsp. nutmeg
2 eggs
1/2 cup chopped walnuts or pecans
General Info
Grease a 9x5x3 inch loaf pan with shortening.
Preheat oven on to 350°.
Instructions:
- In a medium bowl use a wooden spoon to stir together flour, baking powder, salt, spices, and baking soda.
- In separate bowl beat together the pumpkin, oil, water, and spices.
- Stir flour mixture into pumpkin mixture to blend; do not over mix. Add nuts, and stir in quickly.
- Pour into greased loaf pan and cook for 1 hour.
