Curried Chicken Rice Salad
Ingredients
3 cups cooked rice
2 cups cooked chicken, diced
1/2 cup celery, sliced
1/4 cup green onions, chopped
1/4 cup sweet red peppers, chopped
1 cup sour cream
1/4 cup mayonnaise
3 Tbs. peach or mango chutney
2 tsp. curry powder
3/4 tsp. seasoned salt
2 Tbs. pinenuts
Instructions:
In a large bowl combine chicken, rice, celery,onions and red pepper.
Add in remaining ingredients except pine nuts and stir well.
Refrigerate 30 minutes to blend flavours.
Remove from fridge & sprinkle with pine nuts and serve.
