This recipe was given to me by my mother following a trip to Tuscon Arizona.
Ingredients:
1 can (7 oz) whole green chilies
1 1/2 cups shredded Colby/Monterey Jack cheese
3/4 pound ground beef
1/4 cup chopped onion
1 cup milk
4 eggs
1/4 cup flour
1/4 tsp salt
1/8 tsp pepper
Split the chilies and remove the seeds; dry on a paper towel. Arrange the chilies on the bottom of a greased 2 quart baking dish. Top with the cheese. In a skillet, brown the beef and onions; drain. Spoon the meat mixture over the cheese. In a mixing bowl, beat the milk, eggs, flour, salt and pepper until smooth; pour over the beef mixture. Bake uncovered at 350F for 40-45 minutes or until a knife inserted near the center comes out clean. Let stand for 5 minutes before serving.
