Hot Fudge Pudding Cake

Ingredients:

1 1/4 cups granulated sugar, divided
1 cup flour
7 Tblsp baking cocoa, divided
1/4 tsp salt
1/2 cup milk
1/3 cup butter or margarine, melted
1 1/2 tsp vanilla
1/2 cup packed light brown sugar
1 1/4 cups hot water
Whipped topping, optional

Preheat oven to 350°F. Stir together 3/4 cup granulated sugar, flour 3 Tblsp cocoa, baking powder and salt. Stir in the milk, butter and vanilla. Beat until smooth. Spread the batter into an ungreased 8 or 9 inch square baking pan. Stir together the remaining 1/2 cup granulated sugar, brown sugar and remaining 4 Tblsp cocoa. Sprinkle evenly over the batter. Pour hot water over the top. Do not stir. Bake for 35 to 40 minutes at 350°F, or until the center is almost set. Let stand for 15 minutes. Spoon into dessert dishes, spooning the sauce from the bottom of the pan over the top. Garnish with whipped topping.
