3 chicken breasts
1 large onion, diced
1 green pepper diced
1 jalepeno pepper minced (optional)
1/2 pound of mushrooms, sliced
1 can cream of mushroom soup
1 can cream of celery soup
2 cans cream of chicken soup
2 cups chicken broth
1 (16 oz.) Bag of doritos or other tortilla chips
1/2 pound shredded Montaray Jack cheese
1/2 pound shredded Cheddar cheese
Boil the chicken until it is cooked through, then skin, debone and dice the chicken. In a large sauce pan, sautee the vegetables in a small amount of oil, 1 to 2 Tblsps, for about 4 to 5 minutes, until tender. Add the chicken, soups and broth to the vegetables and mix well. Lay the Doritos in a 9 x 13 inch casserole dish and then sprinkle half of the cheese over the chips. Pour the chicken and vegetable mix over the top. Then, add the remaining cheese. Bake at 350°F for 30 to 45 minutes.
