This recipe was a school lunch favorite at Wahlert High School, and originally developed by Fritz Ackerman.
Ingredients:
3 eggs
3/4 cup milk
3/4 cup chicken broth
1 tsp salt
2 Tblsp chopped onion
1 1/4 cup cooked rice
4 cups cooked, diced chicken
4 cups soft bread cubes
Blend the egg yolks, milk and broth. Add the salt, cooked rice, onion, chicken and bread cubes. Beat the egg whites until stiff and fold into the chicken mixture. Pour into a loaf pan and bake for 50 minutes at 375°F.
