Oven Fried Chicken

Ingredients:


One 2 - 3 pound roasting chicken, cut into pieces
1/2 tblsp salt
fresh black pepper
2 Tblsp unslated butter, cut into bits

Preheat oven to 400°F. Wash and dry chicken then sprinkle all sides with the salt, paprika and pepper. Spread the pieces out in a single layer in a shallow pan. Scatter half of the butter bits evenly over the pieces. Cover with aluminum foil, and bake for 20 minutes. Uncover and bake an additional 30 minutesd at 450°F. Turn the chicken over and sprinkle the remaining butter bits over the chicken. Bake for another 30 minutes. Serve hot from the oven or chilled. Cold it is great for a picnic.
