Cocoa Cream Pie

Ingredients:

1 packaged crumb crust, or 8 inch baked pastery shell
3/4 cup sugar
1/4 cup baking cocoa
3 Tblsp cornstarch
1/4 tsp salt
2 cups milk
2 egg yolks beaten
1 Tblsp butter
1 tsp vanilla
Sweetened whipped cream
Strawberries, optional

Stir together the sugar, cocoa, cornstarch and salt in a medium saucepan, then gradually stir in the milk. Cook over medium heat, stirring constantly, until the mixture is thickened and bubbly. Boil 1 minute, then remove from the heat. Gradually stir about half of the hot filling into the beaten yolks. Return the mixture to the saucepan and heat to a gentle boil. Cook and stir for an additional minute. Remove from the heat and stir in the butter and vanilla. Pour the mixture into the prepared crust. Press plastic wrap directly onto the surface. Cool. Refrigerate until set, about 4 to 6 hours. When ready to serve, reomve the plastic wrap and garnish with whipped cream and strawberies. Refrigerate any leftover pie.
