White Beans with Sausages

Ingredients:

1 pound white beans
1 - 2 Tblsp oilve oil
1 pound of peeled tomatoes in their juice
1 medium onion, chopped
5 fresh green onions, chopped
basil
salt
pepper
4 country style sausages, (Bratwurst, Polish sausage or similar)
4 Tblsp grated cheese
3 - 4 cloves garlic Cover the black eyed peas with 4 inches of water and allow to soak overnight. Drain the beans then cover with fresh water and boil until the beans are tender, about 30 minutes. Drain and set aside.

In a medium saucepan heat the oilve oil then add the onions and saute until the onins are translucent, but not brown, about 5 minutes. Add the tomatoes and garlic and heat to boiling, and continue cooking for about 10 minutes. Add a little basil, salt and pepper to taste.

Transfer the beans to a baking dish and cover with the prepared sauce. Agg the sausages, whole, and sprinkle with grated cheese. Bake in a moderate oven for 15 - 20 minutes.
