Bohemian Pie

This recipe was taken from the book Cooking the Austrian Way.

Ingredients:

dough for single 9 inch pie crust
7 onions, thinely sliced
2 tomatoes, coarsely chopped
7 strips of bacon
1 oz. Butter
2 eggs
1 tsp salt
1 tsp pepper
1 tsp paprika
1/4 tsp nutmeg
1/2 cup thin cream

Roll out the crust and place in pie tin. Brush the pie crust with 1 egg white and refrigerate for 15 minutes. Chop the bacon strips into large oblong pieces. Melt the butter in a frying pan then add the onions and bacon. Fry until the onions are brown and the bacon crisp. Add the tomatoes and seasonings, heat a few minutes, then remove from heat. Beat the remaining egg and egg yolk into the cream then add to the onion mixture. Fill the pie shell with the onion mixture and bake at (Moderate) for 25 minutes. Serve hot.
