Potatoes in Mustard Sauce

This recipe was taken from the book Cooking the Austrian Way.

Ingredients:

4 fairly large potatoes
1 cup german mustard
1/2 cup breadcrumbs
1 Tblsp flour
2 Tblsp butter
1 cup stock
salt and pepper

Peel the potatoes and cook in salted water until they are soft, but still firm. Remove them and cut into 1/4 inch thick slices, arranging in an oven dish. Melt the butter in a saucepan and then add the flour. When blended, add the stock, with constant stirring. Add the salt, pepper and mustard. Pour the sauce over the potatoes. Sprinkle the breadcrumbs over the top and dot with little pieces of the remaining tablespoon of butter. Cook in the oven until golden brown.
