Ingredients:
5 1/2 pound russet potatoes, peeled and cut into 2 inch pieces
2 cups hot milk
1/4 cup butter
2 - 2 1/2 cups green onions, chopped
Cook the potatoes in a large pot of boiling salted water until just tender, about 30 minutes. Drain the water then mash using a hand potato masher, until smooth, a hand mixer can be used if desired. Gradually add the milk and beat until blended. Season with salt and pepper to taste.
Melt the butter in a large skillet over medium high heat . Add the green onions and sautee until tender, about 3 minutes. Mix the onions into the potatoes. This dish can be prepared up to 2 hours ahead. It should be covered and allowed to stand at room temperature. Before serving, stir over low heat until heated through.
