Ingredients:
1 pound fresh asparagus, chopped
2 1/4 cup chopped onion
2 cup water
2 Tblsp margarine
2 Tblsp flour
1/2 tsp salt
dash of pepper
1 cup milk
1/2 cup nonfat plain yogurt
Heat asparagus, onion and 1 cup water in a saucepan until the asparagus is tender. Transfer
the contents of the pan to a blender and puree. Set aside. In the original sauce pan add the
margaaine, flour salt and pepper. When the margarine is melted stir in 1 cup water. Cook
over medium heat, stirring constantly until the mixture begins to boil. Stir in the asparagus
puree and 1 cup milik. Remove a small amount of the soup and mix together with 1/2 cup of non-fat
plain yogurt. Mix back into the soup and serve.
