Eggplant
Cold, salted water
Salt and pepper
Butter
1 beaten egg
3 Tblsp flour
Put the whole eggplant into the cold, salted water. Boil until they can be easily pierced with a fork. Peel, mash and season with salt, pepper and butter. Add beaten egg and the flour. Drop by spoonfuls onto a hot greased griddle. Serve hot.
