1 package frozen broccoli (10 oz.) Chopped
1 cup chopped celery
1 small onion, chopped
1 Tblsp oil
1 can cream of chicken soup
1 cup cooked rice
1/2 cup Cheez Whiz
1/2 cup milk
salt and pepper to taste
Parmesan cheese
Cook the broccoli and onion for about 5 minutes in the oil over medium heat. Add the celery and cook for an additional 5 minutes. Add the soup, milk and Cheez Whiz, cook until bubbly. Add the rice, salt and pepper. Put the mixture in a greased casserole and sprinkle with the Parmesan cheese. Bake uncovered in an oven at 350°F. This dish will serve 8 - 10 and freezes well.
Options: The consistency of the casserole can be changed by adding more rice, milk or Cheese Whiz. For a different flavor, cream of mushroom or cream of celery soup can be used.
