half pound of sorted, dried black beans
1 tsp baking soda
water to cover
1 tsp curry powder
1-1.5 tsp hot chili Powder
1 tsp minced or powdered garlic
0.5-1 tsp cumin powder
0.5 tsp dry mustard
Sort beans and then place them in a medium size sauce pan. Cover beans with water, add the baking soda and then bring to a boil. Continue boiling for 3-5 minutes. remove from the hear and let stand for at least 1 hour. Add seasoning spices above, to taste, to the beans mix well and then place over a medium heat. Cook the beans until they are somewhat tender, stirring occasionally so that the beans do not stick to the bottom of the pan and burn. If the beans appear to be getting to dry add a bit more water or a bit of beer for a more rounded flavor. It is also possible to add a bit of lemon juice or salsa to the beans to flavor them.
Just before the beans are done, remove about a third of the beans and mash them into a paste. Return the bean paste to the pan and mix thoroughly with the remaining beans. Serve immediately as is or as the filing for burritos.
